This creamy garlic dressing is so flavourful and silky - without having any cream in it! One of the best healthy eating hacks is to make your own salad dressings. That way you can control the amount of salt, sugar, and fat...because generally we want our salads to be high in nutrients and low in salt, sugar and trans fats! I make one dressing for the week, to save time on busy week nights.
This dressing works well in either a high speed blender or a food processor. You may actually want to double this recipe; it's really yummy and I can't get enough!

Directions:
1. Put all ingredients into a high speed blender or food processor, and blend or process on high until smooth.
2. Taste and add more sea salt or pepper, if needed.
3. Pour into a mason jar or similar airtight container and store in the fridge for up to two weeks. If the dressing is solid when you take it out of the fridge, I just place it in a cup of hot water to bring it back to a liquid.
